“What do I eat?” is the single most popular question that I hear.
You want to eat for health, you want to eat to be symptom-free, you know that it’s possible, you know you feel better when you eat well, and you know and believe that food is medicine, but you just don’t know how to do it. Believe me, I’ve been there.
It’s not easy!
I get it, because I went through it myself. I’ve strayed from my diet and become symptomatic too many times to count. And usually, it’s been because I haven’t had the proper alternatives in place. I simply wasn’t prepared.
In trying to adapt this diet and lifestyle, I have made every possible stupid mistake and fallen into every possible trap, simply because I didn’t have enough information and guidance to help me do it right.
From snacking incessantly on unsweetened carob chips (which really aren’t unsweetened and secretly contain dairy) to substituting regular pasta for rice pasta every night and thinking I was eating well (um, no), it took me a solid year before I began recognizing these unhealthy loopholes I had created for myself, and two years before I was sorta eating properly.
It wasn’t until year three that I felt confident, and now at year five, I’m finally a pro.
That’s five years of my life that it took me to become professional-level at something that is crucial for my recovery. Which is why I’ve made it my job to make sure that doesn’t happen to you.
